Low Carb Chocolate Pancakes (Almond Meal!)

Ingredients:

  • 1 cup almond meal
  • 2 eggs
  • 1/4 cup water (for puffier pancakes, you can use sparkling water)
  • 2 T oil
  • 1/4 teaspoon salt
  • 1 T splenda baking
  • 1 T Cocoa Powder
Mix  all ingredients in a bowl and cook on sprayed skillet 3 minutes each side or as you would any pancake.

These arent fluffy...they are a little more cookie like and I enjoy them when I am craving sweets topped with some sugar-free maple syrup.

I make a double batch and freeze some for reheating in the microwave! mmmm
